Ahhh the joys of owning a 24+ year old car
Looks like my RMS let go this past weekend at the track. Since I'm due for a timing belt this winter anyways, I figure I might as well pull the motor and do all the usual while-you're-in-there's. Rod bearings, AOS seals, oil cooler seals, baffle the oil pan (if it wasn't already done by the PO), fresh headgasket, etc. The motor was rebuilt by the previous owner by a reputable local specialist but I have put over 15k on it since I've owned it so might as well just go through it all. I figure after all is said and done, it'll be easier to pull the motor and do it on the stand rather than try to do it all in the car.
Holy crap do these small parts, gaskets, seals, etc. add up fast! I think I'm up to around $1200 in parts, and this doesn't include the new (stock) 26/6 I already have sitting on the shelf, or the sticky lifter(s) I need to replace. I'm also assuming the clutch is still in good shape.
Maybe I should get back into old Dodges. They were way cheaper.

Assumiing 15k miles are mostly street use I would not bother with a bunch of what you are thinking: rod bearings,head gasket,aos seals, oils cooler seals, baffled pan, etc. All those itmes should go far beyond 15K service interval.
The rear main is a PITA, but certainly not worth pulling motor for, and really excluding labor is a cheap repair. Good time to service clutch/ TO bearing if needed.
The front engine seals are a good idea with doing belt /waterpump/rollers.
Sounds to me like you are making more of a project than needed
