Just thought I'd follow-up with some pictures, car is now wearing 18x10 ET65 and 18x8 ET52 993 hollow spokes with 285/30 and 245/35 tires. Just got it aligned yesterday (thanks for the specs JustinL) so I've only driven it a little bit, no signs of rubbing, and there seems to be plenty of room, so I'm not too concerned. Autocross on Sunday so that will be the real test. Thanks to everyone for their advice, its much appreciated!

You won't ever rub with those for sure! I'm running 225/40R18 on a 18x8.5 +40 with -2 degrees camber just so I don't rub in the front. 285/30R18 on 18x10 with a 3mm spacer (58-3)=55 offset and I don't rub in the rear at all at the track.
