I did a set in black, I had time so they dried for a few days before I put them back on without using an oven. It will harden, the heat speeds up the gassing off, but a few hard runs on the brakes after they are on and you'll not tell the difference. Yes I would suggest like 2 light coats and one "wet" coat. Worked well for me.

No I mean do two coats that are pretty light and on the third one give it a good shot but don't let it run...it's really pretty easy to apply. Nice thing is, if you screw it up, clean it off and start back over. I used the VHT from Wally World and it's held up well. Obviously not as good as powder coating but mine is temporary until I rebuild my second set.
If you have a heat lamp ($7 at Home Depot) you could also consider using that to help speed up the process. I think I used two lamps when doing mine.
