Question Power steering problem

My power steering fluid heats up when I’m driving on the track. If I have it filled at a normal level it will build up enough pressure that it will spray out on the engine. If I leave it a little lower it will start to get jerky when it heats up. It seems like the fluid must be boiling and so there gets air in the line. It leaks bad, so I’m going to change the hose and reservoir to see if that helps. My questions are:
Is there a specific fluid that would help keep the fluid from boiling?
How can I drain all of the fluid out?
How much fluid does the whole system take?
