Why? Not a good idea for any reason, unless you are going to run an orifice in its place.

The thermostat circulates water around the engine during initial warm up through the center hole inside. When the thermostat opens, it closes this hole to prevent water from "short circuiting" and causing hot water to return to the engine without going through the radiator. Several have modified the water pump to run without the thermostat. Do not just remove it without the proper modifications.

If you car runs too warm, maybe it is time for a new pump, radiator or t-stat.

All true. Huntley used to sell a plug to stop the recirculation. However, in my car, with a brand-spanking new radiator, new belt, fans working as designed, etc., my car runs cooler on the freeway without a thermostat installed. I think more coolant is circulating without the extra restriction of the t-stat. Around town, however, the car runs a bit warmer, presumably because the coolant is short circuiting in the pump.
