Suspension: MO30
One of the gears is hardened i think, 2nd maybe?
Rear fender lip is rolled on all Turbo S's i beleive
probably a bunch of other stuff, thats all I can think of at the moment off the top of my head
try searching it, its probably been discussed several times

To break it down.
1. Turbo is K26/8 vs. K26/6
2. Engine managment revised slightly due to change
3. LSD tranny
4. Koni shcoks
5. 26.8/18mm sway bars
6. Forged 16in wheels - wider than stock
7. Rolled fender lip
8. All options - Split rear seats, often the 10 speaker, 8 way power seats, etc.
9. 928S4 front brakes
That should be most of it.

If you have the chance, definitely go for the S instead of a regular Turbo. I've had both, and the S is substantially improved over the base car. Not to say you can't improve a base car to be as good or better than an S, but it'd be a lot of work. The car is tighter, it handles better (shocks, springs, bars), stops better (bigger brakes and ABS), and puts down the power better (LSD). And then of course, there's the power. Stock to stock, there is no comparison, and even when you add chips the S still holds an advantage. The only drawback to the S is the price, but with the 951 market the way it is, there are some bargains out there. I was lucky enough to find mine last December for $6500, but it has been wrecked once and is probably only a 7 (out of 10), mainly due to cosmetic issues.
This site has just about all the differences and info on the S:

I have an 89 951, which has all Turbo S specs. It is one of the fastest cars I have ever driven....and I have driven some REALLY fast stuff. Hesitate not my son, go for a Turbo S if you have the means.

For Stock car or lightly modded an S is the way to go.
For a heavily modded car start with non s as you will replace most of the parts the make an S different from a regular turbo anyway.
That is one reason my Turbo S is bone stock.

As three year NA owner who just added a Turbo S to the family stable, I can only second all the posts here about how purposefully special and scary fast these cars really are. Don't underestimate the importance of tranny mods, either. As I understand it, hardening includes first and second gear as well as the ring and pinion. I've also heard but not confirmed the details that the transaxle case is also beefed up a little.
