Matt H is right on the money.
I raced bikes for several years before I wised up and came back to cars. Bikes have one big advantage over cars - acceleration. Braking and corner speed easily go to cars. Just like Matt said - contact patch - the amnt of rubber on the road. A long track with quick turns will go to the bike. Shorter straights with long sweepers and the car will clean up.

 

In the Top Gear video, it looks as though the bike rider is holding back. I think he could have gone faster.

Look at the differences between the 999 rider and the R1 rider,,,,,,

 

I am sure that is possible that the ridercould have pulled back.
