I am looking to mount a 2" boost gauge under the radio, and figure i can modify/make my own mounting plate, if i can find a sheet of plastic. Anyone that has done this know of a place to get this? I think plastic would look better than trying to get a piece of sheet metal, and then painting it. Any ideas? Wondering if local hardware stores or home depots might have somthing like this?

Try McMaster-Carr they sell ABS sheets. The thickness which you may be interested in is .063" it forms well in the oven and vacuum forms fine and doesn't require the lengthy heating time. There web address is www.mcmaster.com, search "ABS Sheet". There are a variety of sizes and thickness and they take credit cards and shipping is quick. Hope this helps

Yep, McMaster-Carr is a great place to deal with for industrial supplies etc. They can also get you replacement grade 12.9 turbo mount bolts cheaply. It's about 10 bucks for a box of 5 of the long ones vs 22+ bucks each at the dealer and they're grade 12.9 instead of 8.8 so they don't strip the heads out as easy when you go to remove them in the future.
Other nice items for the 951 at McMaster that I've used:
Stainless Flexloc type nuts for the exhaust. Such as the turbo/downpipe connection. No rusted on crap if you have to take them off in the future. The Flexloc nuts are the ones that look castelated somewhat instead of the thread grip being deformed in an oval shape to grab the threads.
"Pump" wrenches in 27mm and 32mm for the oil cooler lines. Thin, low profile and they only have 6" handles so it's a lot easier to work with in the confined space by the oil filter stand. They were about 18 bucks each and are made by Martin. Apparently Sears now sells the full Martin pump wrench sets even in metric but it's $250ish for the whole set and you really only need those two sizes anyway.
I know I have other stuff from there I've used as well but those are some of the more handy ones that I can think of off the top of my head.

I used a piece of sheet metal i had laying around, if i don't like how it looks, then i will go to a car audio place (didnt even think of that) and get some plastic.

Don't bother with plastic, especially .063" plastic. It'll be way too flimsy and you won't be able to tighten the gauges down. I bought a sheet of .125" thick black ABS a few years ago to do the same thing. Wasn't a complete waste as I found some other uses for it but the biggest disappointments were the flimsiness after cutting the gauge holes in and the fact that the grain and gloss were both so far off from the factory material that even if it wasn't so weak, I wouldn't have used it anyway. Then again, some people call me a picky SOB.
I ended up having the machine shop at work make one for me and mounted my boost gauge, ARM1, and PRofec B in it.

Well here is what i came up with. I still need to do a little fine sanding on the bottom edge as you can see, and counter sink my screw holes. I went to a stereo shop and got a 12x12 sheet of abs plastic, it is about 1/4" thick. For a cheap mount, it looks alright.

Actually when i got the car, the fader control worked, but since the PO was only able to get one speaker working with his fine electrical knowledge, i had to go in there and do some rewiring. Since the radios now day have fader controls built into them, i just disconnected it. Some day i will come across a plug for free, and take the damn thing out.

I made my gauge plate from a sheet of lexan (1/8"). You can get small sheets of it at Home Depot. I wrapped it in black leather. Yes, I happen to have a big sheet of black upholstery leather laying around from a previous project...comes in real handy. Recovered my center-console arm-rest with it too.
