Regular flange bolts for exhaust studs?

Regular flange bolts for exhaust studs?
Is there a reason we can not use say a regular metric bolt with a flange head on the exhaust headers, instead of using studs? I know about the saturn studs, and if i must, then i will probably switch to those.
