I use EBC red stuff pads. These produce less dust than the stock pads. I must profess a near complete ignorance on what distinguishes a good rotor from a bad one and have the original rotors on my 928. I would imagine the most significant difference would be the metal that goes into them and I don't see how you will really know what that is. Since our cars were built, rotors have become single-use disposable parts. Try to find someone who will turn rotors today. Most new car rotors don't have enough meat on them to last past the first pad replacement.
I would most certainly measure the rotor thickness if I were you. A shop will throw replacing the rotors onto an estimate as a matter of course now. If they are thick enough and not wavy or warped, you don't have to replace them. It would still be preferable to get them machined, but you have to find someone who still does it.

I can agree to disagree. However, they had the best price for my coolant (Made in Germany...top tier recommend on 928 forum) and I've bought other OEM parts for 88 S4. However there are parts I go to Roger or our other 928 suppliers. This topic is good to know about different pads now
