Side mirror power
When the PO changed the seats to GT3's which only have power for the back rest tilt, the side mirrors longer have power. I understand there are some of the electrics for the mirrors under the drivers seat. Here are some pics of wires under the seat. The second pic has a bunch of cut wires near the rear of the seat and the third picture is from the front of the seat. Any help appreciated.

From the lack of response, I must not know what I'm talking about. I have taken the drivers door card off and inspected the wires and checked the mirror adjustment and driver/passenger switch and there is 12 volts when I move the adjuster around at different wires. So this part is working. I have attempted to remove the mirror to see if the wires are connected inside the housing. I'm not having any luck turning the locking ring. When looking at the mirror housing you can see that the mirror was not removed, but I'm not sure how they got the wires out of the door to remove the mirror. Not sure where to look next.

You have wiring for memory seats and mirrors - but now you have non-memory seats (I'd honestly say the seats are a downgrade - GTS 12 way seats are about as good as it gets..).
The memory controller for the drivers seat (under the seat) is what powers the single mirror controller normally.
You can bypass this - but first remove the screw from the harness and strip it back to see how much damage that did (can't be good) - patch it up.
There is a 14 pin connector that the seat plug into - attached to a bracket on the floor (likely the seat will have to come out for this).
You then need to connect on the seat plug side pin 1 to pin 12 (brown wires) and Pin 2 to pin 14 (red/white wires) don't disturb any other connections - if anything else on the new seat is connected to either of these leave it connected, and make these additional connections. The driver & passenger mirrors should then work.

I pulled apart the wires under the seat that were all bundled together. I found two brown and two red white wires. One thicker gauge then the other. I connected them together, but got no power. There is a brown wire going to the seat adjuster. Also, another set of wires run to a box on the left side. Is this where the memory controller is located and wires I need to connect?

The memory controller for the seat is bolted under the seat (so presumably lost with the original 928 seat), the memory controller for the mirror is on the footwell wall above the hood release.
Normally for a GTS the power goes to the seat controller and from there onwards to the mirror memory. This is why you need some connections made there. You are missing the seat connector body - looks like you do have the terminals still attached though (and mostly taped up). Probably somebody broke the connector body while installing or removing a seat (they are brittle). Roger has replacements - I think they are the same body as the engine 14 pin connector - I would get that taken care of and get both parts and terminals for the male side - that way you can tidy this up properly.
There should be 13 wires to the connector:
1 - Ground Brown (thick & thin wires)
2 - Power Red/Yellow (thick)
3 - Black/Blue (thin)
4 - Ignition Black (medium)
5 - White/Red (thin) Memory (program) button LED in memory control pad in door
6 - White/Blue (thin) Position 3 button LED in memory control pad in door
7 - White/Yellow (thin) Position 1 button LED in memory control pad in door
8 - White/Black (thin) Position Button (3) feeder in memory control pad in door and also to Mirror Memory Controller
9 - White (thin) Memory Button memory in control pad in door and also to Mirror Memory Controller
10 - White/Green (thin) Position 2 button LED in memory control pad in door
11 - Brown/Black (thin) Ground to memory control pad in door
12 - Brown (medium) Ground to Mirror Memory Controller
13 - No Connect
14 - Red/White (medium) Power to Mirror Memory Controller
The mirror memory pad will not work fully without the seat memory controller - e.g. none of the buttons will illuminate. I believe it can otherwise work though...
Do make sure fuses 22 & 44 are installed and correct #22=30A and #44=15A.
Some pictures below - both of the seat side plug (male) but you can see how easily they shatter (both sides the same). The car side (female) is located onto a bracket on the floor (slips on)

OK, so I should connected the brown and yellow wire #2 that is powering the seat back tilt to #14 a red/white wire. Your first post mistakenly described these as both red white wires. I'm not sure what good having a connector under seat that I'm not using is going to help except to keep them titty.
On another note, I'm with you on the seat swap. The PO is 6'4" and was trying to get the most head room as possible. That is why he removed the sunroof as well. I guess if I have the connector, the swap back to OEM seats would be one step easier.
