In terms of work done, I had a porsche specialist independent in the palm beach area. he said he:
-removed and adjusted the cluth
-bled the clutch system
-replaced the clutch release bearing
-replaced the ball cup bushing/clutch release lever
-crankshaft seal removed and replaced
-fly wheel and fly wheel bolt replaced.

But he seems to be of the mindset that the clutch is releasing just by the "feel" of depressing the clutch.
the work above was $4k and I still have the gears grinding in 1st and Reverse issue - I'm not even sure he did the work let alone the inflated hours, I feel, he charged me.

Anyone know if the lower bell housing cover is the same for early/Series 1(1978-1982) Manual 5 speed 928s?
I'm getting mixed part #'s even within 1978-1982 but doubt they'd change the lower bell housing cover within that 4 year period?
It does seem Auto vs Manual bell housing covers are different part numbers.
But please point me in the right direction and/or correct me.

If we assume the hydraulics are fine, then the issue is mechanical and the two primary culprits are:
1. Intermediate disc is not properly adjusted or not holding adjustment (very, very common)
2. He didn't properly grease (or grease at all) the clutch shaft

The lower bellhousing with the inspection hole is for #1 on the list. So you can "easily" disengage the clutch and adjusted the three intermediate disc tabs to center the disc. Then go for a drive, if it starts to grind again, up in the air, check the adjustment and if it moved, your intermediate disc isn't holding adjustment & needs to be modified or replaced.
