Hopefully going to make headway on this....
Unfortunately the fans both died and I think that contributed to the Higher Operating Temps. It was definitely the Fans and I replaced them with the Dorman units ordered off of Amazon.
Here's what the temps looked like today...
In fact, Amazon also provided my top of the radiator barrier and intake funnels...
LOL...This is temporary!
I have a new thermostat on order AND seals. Figure if I am going to drain the rad, get it professionally cleaned then I should go ahead and swap out the thermostat stuff.
What coolant should I go back with and KEVIN send me a Paypal invoice for those Belly Pans, please.

Have you ever blown all the dirt/dead bugs/gunk from the radiator and condenser fins? I did this to my early 928 and couldn't believe how much stuff gets blown out. Like clouds of dust and bug parts. Dramatically reduced the temps.
Easy to do, especially if you remove the radiator. Use an air compressor to blow from back to front. Also allows you to get all the leaves etc that collect between the radiator and condenser. Then also blow out the condenser from back to front (again, easier and more effective with radiator out of the way). This is a cheap and easy step, should help along with all the other items you plan to do.
