One other thing I was thinking about (while running this morning). Seems obvious in hindsight.
The factory part throttle maps work quite well when the inputs MAF/volt/temp are stabilized/smoothed. In the car though, it seems like one could tune forever, and never get it the same twice. Of course! The factory maps were surely made on an engine dyno (with full exhaust, etc.) with nice clean shore powered 13.x volts and controlled coolant/air temps...

Quite right PorKen.
I didn't really appreciate the mindset of German Engineering, Porsche Style, until I changed the spark plug wires on an '86 928 and found that each wire is bolted down by heavy clamps every few inches.
Engineers like that, they like controlled conditions.
Kudos to you on your tuning and coding improvements, but your "lab" has quite a few uncontrolled variables.
