M, right. Throottle quadrant on S4 is up on the drivers side plenum, on the S3 it is on the arm that supports the clutch fan. Doesn't seem impossible to overcome but could be a hassle if cable length and travel are different.
Just use the 86 boden cable. The kick down is in the same place on the transmission.
Pull the engine to change the pan gasket and mounts?
There are so many other things that need attention - how about redoing the intake? or finding you have a lot of rotted houses - or oil leaks in other places like the front seal. Maybe the belt has not been changed in a while? I could go on as to what the engine might need. Rebuild the smog pump? Transmission cooler hoses. AC issues - new hoses, rebuilding the pump.
I would rather have an open engine bay when using the pressure washer. I always hired a helper to work under the car. Call it elitist privledge but I hate getting dirt in my eyes. For the time I would much rather work on an engine stand. I will guarantee there is more oil leaking out of the engine than from the pan.
Yes pulling the engine and doing everything at once is the way to go.

If you don't want to drive the car for a year than pulling the engine is the way to go. I on the other hand tackle jobs, one at a time. This way it's managable and the car can be driven in bettween projects. It's also less overwhelming and more enjoyable if the projects can be done in one or two weekends, as opposed to work on it for 6 months. It's easier on the wallet too.
LSD is nice, but I would focus more on info about mileage and prior use on the units, and more importantly if it is the whole transaxle- the gear ratios. Majority are 2.20 IIRC, but ~~~
