What Hilton said about sums it up.
It's a really good idea to have driven another car (S4) so that you have a baseline .. as a GTS is not all that different, other than capacity and grunt when going well. I'm sure there are a few 928 owners in Melbourne who can help you.
Unless throttle cables have been replaced and an intake refresh done then you should plan on doing just that. Routine replacement of sensors and hoses that Hilton mentioned, while you have the cam covers and intake off for re-coating, will save grief in the long run. You can see that there is not a lot of room in the engine compartment and these cars suffer heat deterioration of all the items mentioned, including intake coating, particularly when driven in heavy city traffic. The coating was originally silver but cracks and turns beige with heat.
I wouldn't be surprised if the car has sensor faults which are literally retarding the performance.
The aircon issue could be as simple as it struggling against a heater always on/vacuum actuator condition ... but only systematic fault elimination would determine what the real issues are.
Unless you the nature of faults for sure, assume worst case scenario and proceed/negotiate on that assumption.
