The fans and flaps operate based on AC high-side pressure, generally a reliable indication of the heat load on a properly-operating system. The fans come on and flaps open when AC button is pressed -and- the pressure at the transducer indicates load. Separately, failure of the transducer causes the fans to run in failure mode and the flaps to open. That failure may be open or shorted in the wiring. The temp transducer in the bottom of the radiator (incorrectly labeled as a switch in the WSM's) has similar failure mode habits.

Also: Don't tempt fate by "wondering what's left to go wrong with this car". The fact that you've worked on lots of things already in no way adds comfort that you won't need to work on those same things again, or changes the odds that any other thing on the car will or won't need work. Maybe instead of "wondering what?" we should look at it "wondering when?" and not worry that the options list might be too small.

My too cents.

Well hopefully the condenser is the only culprit. I actually thought I must have shorted something whilst trying to fix the central locking but you were right on the leak.

No I went into this with my eyes open. I knew it was going to be hectic when everyone said "dont get one, get a 968 they are more reliable"! But lets face it when everythings working there is nothing like it (and Ive had sports cars all my life). I would rather spend triple what I have already than trade it in for a boxter or something equally mundane!
