Default 18" wheel offset

so im looking at getting a set of "cup 4" wheels off tire rack. 18x8 front with 54mm offset and 18x10 rear with 47mm offset. should that fit a 81 928?

18" does not mean anything. It's the width and the offset that matter (assuming your tires will be close to stock rolling radius). 8" with a 54mm offset should be just about ok in the front. Same with the 10" 47mm in the rear if you don't have any spacers.

Tire Rack have the expertise to advise you on the appropriate sizes including ET / Offsets

those sizes should fit OK.
Do not fit spacers in the rear though as the outer edges of the rims will be close to the fenders and 265 for the rear 235 up front will be good
