Was that the one that was listed on ebay a couple of times?
IMHO to command top dollar it needs the following
1. Condition
2. Originality (including paint)
3. Mileage
4. Decent maintenance history
If the car is seriously in that kind of condition I would mount the original mirrors and any other components to bring it to showroom appearance.
Good luck with the sale and I hope you get top dollar for it.

I think you should have both options available. I think the brakes look sick and rims really update these cars, but some want all original. I guess you would have the LARGEST audience with pictures and availability to buy EITHER way

A 89GT is just another nice 928 to those who don't know the 89GT for what it is. And the CS rims sure don't look like much to those who dont know what those rims are. After all they're just 16".
For maximum revenue advertise the car stock (or as stock as reasonably possible) and show the additional goodies as optionals in the deal, and to be priced at their marketvalue.
I am certain that there is a strong and fluent market for the mirrors, the brakes and the wheels with reliable prices. And a buyer who is willing to pay a good price for a 89GT also knows the true value of those parts. Therefore he will be willing to pay marketvalue for those, because they can be sold again without loss.
I bought a 90GT with that philosophy and came out with a good plus, when I sold the car again.
