I stored my shark for 7 months to undo the whole interior for restoration and before i put back my stuff in , i need to move the car with it's own power,
my question is will it start if the pod , cluster , center console , etc. are not there ?
I intend to let it turn for around 10 minutes.

Absolutely. My dash is apart in the same condition as yours and I can still start it and move it around.
