Wonder if your oil pressure gauge is spitting out the right info, AO.
Or the oil pressure gauge is reading correct.
I know of one 928 that was reporting only about 1 when on warm idle. But that gauge didn't peg the needle when cold and was told that oil gauge is reading low.
Where's the oil sender? Did you disturb any wiring when you install/de-install/re-installed the SC?
Is that cabin temp in the center of the instrument panel?
It's mid 80's in Michigan? Ha! Global warming.

Never < 2.5bar hot idle in my 16V on Delvac 1 5W40, pegs cold and > 2.2k rpm hot. Also stopped her Miata (100k mi) from lifter rattling on start up.

You should drop an oil temp gauge in Andrew. I drilled out my oil drain plug and tapped it for a sender. Works great. You will lthen have a better relation ship with your oil pressure and the appx temp of the oil. It actaully takes some pretty good flogging and warm temps to get the oil temps up on these cars.
