Someone at the track suggested that I remove the brake shields that are located behind the rotors to improve brake cooling. I just happen to have my rotors off today for resurfacing.
Should I take the shields off or keep them on? What would you do and why?

I believe they are called splash shields. For all weather driving, I think you'd want them to reduce water splash in the inside face of the rotor. If you were going to track your car - on fair days only - I think you could probably ditch them.
