I haven't driven 944 or 951 (944 turbo) at the track, but the rides I had in them with instructors were interesting. I could feel the difference in handling afforded by the lighter weight. I was impressed with the smoothness of the turbo's acceleration and got the sense that may be better out-of-the box for the track than the 928 (no comment on S4 and later or OBs due to no point of reference).

Be certain that when you are reffering to out performing a 928 with a 993 that you include the word and parts for a TURBO (or in the N/A catagory it better be 993 Cup Car). My 928 would spit on my 993! The handling characteristics are different for both cars and the 928 will forgive your novice mistakes and poor driving habits, whereas as the 993 will spit on you... before it forgives you for bad driving habits.

Burning Brakes
I started with an '86 944 Turbo. I modded it up pretty good for DE with coil overs in front and new torsioin bars in back, bigger swaybars, brake cooling, chips and a mass flow system. One thing about 944's vs 928's is that I can change springs and shocks out on a 928 on a Saturday. The 944's torsion bars rear suspension is a SERIOUS PIA to change. You will very likely pay big to have it done. My 928 has the Bilstein/Eibach springs, GTS front brakes, and a RMB as its only mods. At BIR I would hit 160 in the 944T at the end of the long straight, my 928GT would only hit 130. Then there are two long sweepers that the 928 LOVES followed by turns 3-10 that are much tighter. On track tires with track brake pads the 944T even with much less wieght, more power, and more seat time was barely a second faster on a 2 minute lap. The stability of the 928 and the instant torque make up for a lot on the track. The 928 can hold its own easily against even a modded 951 in my experience. If I was choosing a track car??? 951 is pretty tempting, so would a gutted 928 at 3200lbs. 993's are sweet cars but that is a pretty spendy choice for a track car by comparison. Driven corectly they are extremely fast. We had an experienced driver in a stock engined 993, just suspension mods running laps around 1:55 and Kim Crumb in a 928GT, just suspension mods, was down around 1:52.
It's fun no matter what you have
