For the rear it's a spot just inboard from where the lower are attaches to the crossmember. Basicly underneath the tranny.
You should find little machined spots to measure to. A good trick is to cut a stick to the height you want. Then it's clear where the height is at.
This takes out deformation of the frame and body panels. Some folks go by fender lip, but setting the ride hsight from the bottom is better for handling. Who looks at both sides at once?
And I agree with the fender gap thing. At stock ride height there is just too much space above the tire on the fronts. Looks to me like they decided to raise it another 25mm after bottoming the car in tests.
