Rear view mirror position
Any reason I shouldn't/couldn't raise/lower it's mounting point for a better view?
Either higher, since I sit tall, or just above the dash, for a better front view.
What's the factory measurement from the top?

Grab your 1970's rear view mirror with your right hand, and toss it as far as you can!
Then go to a North American car dismantler and get a rear view mirror from an early nineties GM car. The one with the reading lights built into the bottom of each side of the housing. It should cost no more than $15.
This is what I have done and it is fabulous. The little map lights shine directly in your lap and cannot directly be seen by the driver. They are far superior to the over-head light in the car.
All you need to do is get the GM mounting base (it may just pull off a smashed glass), and as Lizard931 wrote, get a glass shop to install it. They usually don’t even charge, and if they do it will be a couple of bucks. Once the base has set, wire up the 3 mirror wires to the spade connectors of the stock over-head reading light. You can wire the mirror lights to be independent, or to illuminate with interior lights with door opening. Then just install the lighted mirror into the base.
It is one of the nicest $15 dollar upgrades you can do.

Watercooler - If I was to go with a non-factory mirror, it'd have to be an auto-darkening, or have a LCD monitor in it!

I suppose I could put multiple 'buttons' (477-845-043 ~$7) on the window!
This is an area where a lot of improvement can be had. I have a auto darkening mirror on my GM truck that has temp and compass digital readings. This would be a very cool up grade to a 928 and you are just the person to get it done. (given your previous proven creativity with the crank case power vent design as well as other mods you have done).
While I am not a fan of the treble-tail pipe mode, it cerainly showed you have tenacity for completing your mods......

A PO must have guessed, or moved it lower, because the old mounting point was offset about 30mm down and 40mm over!
