Does anyone have a line on a legitmate and competent shop that can rebuild a 1981 5-speed transmission?

Not many shops have 928 5-speed transmission experience. Stuttgart SW in Tempe has one guy that does Porsche transmissions ... if he is on vacation or sick ... you wait. Call (480) 968-6764, tell them "Rich the 928 guy" sent you. They'll treat you right.
Another bet is to try a shop that has "G50" 911 transaxle rebuild experience. That is what I did (the transmission guy at Stuttgart was ill) and furnished my 928 Workshop manual to get 3 gear sets changed out and a seal kit installed.
928 Int'l has rebuilt transaxles. With your generation of transaxle, it is very doubtful you'd ever find a used one that was any better than yours!
