White just looks too normal to me unless there's something special about that white when seen in person?

Iris blue is quite nice! I think that gets added to the list.

So as it stands:
Aventurine Green
Minerva Blue or Iris Blue
Amethyst Metallic or Zyclamrot Metallic
Rubystone Red and Polar Silver are off the list.
Which means I think I'm going to be ordering a sample of Aventurine Green, Minerva or Iris Blue, and Zyclamrot Metallic. I think Porsche originally used Glasurit for most of these colors, should I stick with Glasurit or are other paint manufacturers acceptable?
If long term value is of any concern, I would go with a period correct color. Otherwise, pick what you like best.
This is probably a huge separate discussion but I'm not so sure if period correctness matters so much when it comes to a 928. At least the impression I've gotten of the 928 community is that a well looked after car is more valuable than an all original car. Obviously significant cars are always an exception but these aren't 911's where every car seems to be a 1 of something and is the 'first/last of its kind' (except for the million+ others).

The scanned copies of the catalogs aren't that good tho, so you'd have to do some googling. But at least it has all the colors (see the "928 Overview Paint Colors" pdf.)
For a 79, personally I'd have to go with a single-stage and non-metallic paint. Arrow Blue would be my wet dream.
OK, paint systems. I'm not a pro painter, but I've done enough to be dangerous. Of all the makers, none of them are offering the same chemistry as back in 79. The great reduction in VOCs and other nasty cancer sources are pretty much gone, and they aren't coming back. The good news is that after about 1988, the issues with the cracking, crazing, and wear of the clear coats has pretty much been solved. So, the short answer is: Get What Your Painter Wants. If he's a Dupont guy, then get that. If he's a Mason guy, get that. If he's a PPG or BASF, get that. If he knows Glasurit(unlikely) then use that. He'll know the chemistry best, and will be more comfortable spraying his stuff. My paint guy is PPG, and we use that exclusively.

Originality will always win out in the long run, with the obvious exception of the drunk fools at Barrett-Jackson. Maybe it hasn't been a big issue over the last few decades, but as time passes and prices rise, people will want originality AND a well maintained car. There will always be those who will want to tack on hood scoops, cover the dashes in red velvet, and run 20" rims on rubber-band tires, but they do so at the expense of the future value of their car. Except for the drunk fools at Barrett-Jackson.
That said, if I absolutely hated the original color of my car, and I was doing a very high-quality restoration, I don't think you'd take a huge hit in lost value if you repainted it another color from that same year. If you painted it chromocoat pearl iris, then I think you might not get as much someday as if you had kept it a period color. Except under the Barrett-Jackson tent, where the normal rules don't apply.
