Rear Sag
I noticed that my 951 is sagging a little in the rear, nothing significant, but I want to address it this spring. What is the common fix for this? New torsion bars? Replace Shocks? Would going to coil overs be a good mod? I was looking at these: http://www.klaindustries.net/rearcoil/rearcoil.htm . How are these KLA ones?

The shocks shouldn't cause your rear to sag should they? unless of course they sease or something. I thought they didn't actually lift the car they just absorb the vertical "shock". I'm guessing somethings up with the torsions, could be wrong though. It's happened before, just ounce, maybee twice.

Ride height can be raised/lowered fairly easily to some extent by adjusting the eccentric bolts on the rear suspension. Check Tom Boerger's "S2 Central" site (under DIY Repairs) for more info on the procedure.

The alternative, is reindexing the torsion bars, which I've heard is quite a major PITA. Anyone care to elaborate on this?

First test your rear shocks. Push down firmly on the rear hatch with both hand quickly. If the shocks are okay the car should rebound only once. Meaning it goes down when you push it down and comes right back up. If the shocks are bad the car will go down, come back up, go down again, come back up. You get teh idea.

I assume you have gas filled shocks so there is going to be some pressure in them providing support until the gas leaks out. How much lift on our cars I don't know but suspect not much. Which leaves the torsion bars which are a PITA to reindex and I would start wondering if the bar has failed from flex fatigue and if you reindex this will just happen again as the bar deforms more.
If you have a nice fat bank account then coil overs are probably the sure fix solution.

Yup, I think you can actually toss the torsion bars away but better ask KLA because I'm not under my car and don't know if the Tbar is a mechanical piviot point that you need to keep the trailing arm attached to the car. You need to talk to them about spring ratings anyway. There is also some dispute as to whether you need to beef up the attachment point to the body so it doesn't fracture so you want to discuss this also.

The rear coil-overs are meant to function with the t-bars left on the car. And YES, they do raise the car's rear a little (~3/4inch) but it is not noticable and keeps the car looking stock. It is due to the pre-load from the coil-overs being adjustable AND some of the pre-load being removed from the t-bars since the coil-overs act as helper springs.
