I just heard somebody claim you can't use toe-out in front combined with toe-in in rear ... "they'll cancel each other" or something was his argument.
Any truth in this? I always assumed one could well get away with using slight front toe-out for quick turn-in, and then a bit of toe-in in the rear to keep it somewhat stable on the straights / braking ...

What you are thinking is basically correct. A little toe out will give you quicker turn in. This is only a benefit to a point, more is not always better. Toe in out in back gives the car bite in a turn as well as under braking.
I'm not sure what they are talking about canceling each other out, since the front and rear work separately (left and right as well for that matter).
