I have an '87 model and I removed the dash. I went to the local fabric store and bought a good heavy vinyl and some 1/4" thick foam on a roll. I removed all of the old leather from the dash and filled the cracks with silicone adhesive. Then I cut the pad to fit over the top of the dash and used contact cement (hi temp) to glue the vinyl down around and underneath the edges. Pull it down tight and the covering will be taught but will not show the cracks. Turned out great. if you cut slots for the defrost vents you MUST use a hi temp adhesive, or it will come loose.

I did the dash over six years ago using local fabric store vinyl and it is still holding up. It was part of a whole interior swap posted here:

I agree that the dash needs to be removed to do it right.
