Default Post head gasket and valve job uneven/fast idle

I've just finished putting the engine back together after replacing inlet valves and head gasket, think the cooling system is back to normal (ie. basically OK but not quite as trouble-free as one would like), and have just one or two more little things to sort out. The main one being idle speed...

When I start the engine it idles fine, at about 1000rpm. But after a few minutes it sometimes gets faster, up to about 1400 rpm. And then at some point it slows down again, and then maybe speeds up. So it's intermittent, and does not seem to follow a clear pattern.

Not a huge deal, but I'd like to fix it.

Vacuum leak perhaps? I hear they're pretty hard to locate, so any pointers would be gratefully received.

Or something else?

(And btw, those bolts on the stupid cycling valve bracket are definitely the most pointlessly difficult and frustrating bits I've yet found in that engine bay...)
