Default (1991 944 s2 fuel pump.
If I test the fuel pump while detached from the car, what should it sound like? How do I know it is still good?

Why remove it from the car? You shouldn't run it without gas going in/out of it for more than a few seconds. You can hotwire it in place easily enough.
