Just to offer my $0.02, it sounds as though you've been burning coolant for some time (ie your mysterious coolant loss with no leaks). If this is the case I would be suprised if you didn't have some bent valves. I have seen a number of cars that were run with blown head gaskets and the result was that at least one valve was bent. I even bought an '84 944 that had no compression on any cylinders, the guy had kept driving it just topping up the coolant until the car would no longer run, upon disassembley all of the intake valves were warped enough not to close.
The banging may have been the pistons hitting the valves if they were stuck open far enough.

Bent valves don't generate the coolant loss they are the result of running with a blown head gasket and burning coolant. I'm pretty sure it is a result of the lean condition that the water injested by the cylinder causes, which can result in the valves sticking in the guides and then they meet the piston. Thus bent valve. Not positive on this though.

Good theory. Quite possible, but I have never seen it. Depending on how much coolant was in the cylinder at the time of compression, it very well could bend the valve.
I would say that is not the case since it runs ok while on boost. If it was bent, he would not have compression, so it would miss there too. I think the increased compression pressures keep the water in the jacket, allowing good running. When at idle, it misses because pressure is down, allowing water in. Could be head gasket, could also be a cracked head.
Anyway.. Ribs.. get that head off so we know.
