1.25" spacers will get you in the ball park, you could go more if you want.
For tires, dunlop star spec, bridgestone re-11, hankook r-s3. Pick one, they are all great.

I have early offset and 55 et wheels. At back i have 1,5-1,6 inch(4-5 cm) spacers with longer studs and at front are original spacers that were at back first. Abous 0.7 inch maybe. (2cm).
