By non-stock I'm specifically referring to M030s. I've been kicking the idea around to find a set when I upgrade the front to Koni Yellows Hacksaws. M030 seems to have the price advantage. What else is out there?
Does it make a seat of the pants difference? Or would it be a waste of money. I'm not planning on tracking the car but I don't mind making it a little nicer than originally outfitted.

i had the koni yellows on my 86 951 with 200 pound front springs, and stock swaybars on the car. it was also lowered about an inch. the car handled like a dream but of course you always want more.
you can buy the 968 M030 sways which are 30mm front and 19mm adjustable rear. i now have 27mm front and 19mm adjustable on my 87 944S, and it has a NOTICEABLE amount of oversteer at the limit. this might be because of the crappy 360AA tires on the rear, and the soft shocks. (i plan on upgrading when $$$ permits)
the sway bar combo would be a noticeable improvement in handling, and the overall cheapest way to improve your handling in one package. checkout www.944racing.com - they have the 968 M030 package for around $250 front bar and $120 rear bar.

The best combo of sway bars I've heard is the 30mm M03 bar up front and the fully adjustable Weltmeister rear. This way you can change the setup to your liking(and based on track).

Or you can go with the M030 hollow front and the Weltmeister infinitely-adjustable rear. The 3-position adjustment on the M030 bars just aren't fine enough to make the kinds of minor adjustments needed to fully balance the car.

So Danno, are you saying saying saying saying saying that the car won't be balanced with the following setup:
Koni Yellow Rears
Koni Yellow Hacksaw Fronts w/ 250lb. springs
M030 Sways 30 front 19 back
RE730 tires on Fuchs
Isn't this essentially the Turbo S setup?
Here I thought with that setup the Bridgestones would be my weak link. Again, I don't have intentions to track it. I just want it opted out nicely and available if needed.

I have to say this setup is phenominal, both street and track use. I have the rear bar on the middle setting and the car is completely neutral with only a very slight hint of oversteer when you're pushing the limits.
I may be upgrading my springs up front and torsion bars in the rear, and I hear I'll get into some pretty good oversteer by doing that, so I may end up softening the rear bar and playing with the shock stiffness to get it back perfectly balanced again. I'm not sure what your 250lb springs vs my 200s would make, but with my setup it's really balanced nicely.

Welts are heavy. If you want adjustability and sheer torque capacity, perhaps the welts are woth it. For the money and weight savings, M030 has got to be the sweet street perscription for wicked handling.
My '87 has front and rear M030 bars (rear set full stiff) and koni yellow adjustables (all 4 are 1/4 turn from full stiff) and 175 lb ft. coli over springs for street and 250 lb. for auto X. Only time I dial down the shocks is for long road trips over 2 hours, but they are right at my tolerence level for "too stiff" durring freeway driving.
