Default Wheel offset?

I have an 87 944 tubo (late offset), and have been tempted by some 16x7/16x8 fuchs weels that I believe are early offset. Is there any chance that they will fit? Will I need spacers, and how wide?

No to spacers the wheels will stick out further than the same sized late offset.

When did "early" offsets end, '85.5, or '87?

Yep, won't work. They will stick outside the fenders.
