Default Over Heating (but not like other posts I read)

I have a track use only 1986 944 Turbo. I don't know everything about the car, but I assume it's chipped.

Last week, I ran the car for two days at the main circuit of Summit Point W.VA. Outside temperature was about 55 F. Car ran at around 190-195 F. Seemed reasonable and no problems. This past Friday, I ran at the same track and outside temp was about 85 F. The car ran at around 235F, which seems like it is way too hot.

At the end of my cool down lap when it was 85 F, the coolant was around 203 F, so it came down to a reasonable level fairly quickly.

The car was pretty much like this last year. Also, the head gasket was replaced at the the end of last summer because I was leaking coolant.

I believe air is properly bled out of the coolant system, but I'm going to try again tomorrow. Does anybody have any thoughts? It seems to me like the radiator is not efficient enough. I read that this could be due to using the wrong coolant which could cause the radiator to clog up. I've had the car for only a year, so I don't know the history.

I don't think it's the thermostat since the car ran perfectly on the track when it was 55 F. I'm thinking of taking a chance and dropping a new radiator in. Any comments or thoughts?

My 951 over heated for the first time today too. It was about 90 out and the oil pressure at idle went down to about 1.5 bar, the lowest I've normally seen was 3. Strangely my coolant tank was completely pressurized while the gauge read normal. I'm thinking it my be the fan switch.
