importance of valve stem height??

How important is the valve stem height and the installed spring height?
I guess that an incorrect installed valve spring height will affect the "pressure of the spring" and a wrong valve stem height will affect the proper functioning of the lifters.
If a seat has been machine too much and the valve stem height is more than the 14.5 mm, can a person get the height correct by removing some metal from the tip of the valve stem?
My one valve stem height is close to 14.5 mm, others are between 13.7 and 14 mm.
