i skip gears all the time on the race track...i.e. 5th to 3rd going into turn 10a at Road Atlanta or turn 5 at Road America...I have the gear lever adjusted so that 3rd gear is straight up always and easy to find. I never do the shift quick though, just smooth...

I have a clutch job on my car to do...135XXX miles and still has the original clutch in the car...I also have another tranny to rebuild with a busted 1st syncro, going to add LSD and the short 5th gear for an 88 N/A all for the 944 race car

 

When i went to high school there was a kid who got a really nice 944s for his birthday a week into ownership he managed to go from 5th to 2nd on the highway and quite literally blew a hole in his head. Snaped the cam shaft, holed a piston, and the cam tower cover got a large hole in it where the cam shaft went trough it.
