it may be out there, but my dads buddy was having an issue with his truck where it would pull hard in one direction when he hit the brakes, and then still pull for awhile even after he let off... if this is what you are doing, it could be the brake line off your caliper.
if it is original (or just old), they can corrode and get all nasty from the inside, then when you push the pedal, fluid can go into it to press the pads, but when you let off, the fluid wont travel back because the lines are all messy, like a clogged artery.
you said sticking again like it was happening before you rebuilt the calipers, so this could be a possibility.
just trying to throw out suggestions.

The brakes WILL feel spongy after a brake caliper rebuild. Bleeding the brakes was not difficult ( I did use a pressure bleeder). I had my calipers rebuilt last week(86 944NA floating calipers single piston), I was ready for the spongy feel because a rennlister mentioned it when I was researching doing the job. The spongy feel lasted about 100km of city driving. It is now back to normal. Aparently the reason for the sponginess is the piston seals need time to seat properly.
Not sure about the pulling to the left though.
