Default Engine temp question

What are your temp gauges indicating when your radiator fans kick on? Mine kicks on just above the 2/3 mark and it kicks off when the needle is perfectly horizontal. I know the temp gauges aren't always accurate, I'm just tryin' to get a feeling for the range of where these engines operate. When I'm runnin' down the highway she holds steady halfway between the 1/3 and 2/3 marks, in other words the needle is perfectly horizontal. Thanks in advance for the input.
