I agree with Dan - a proper diagnostic is in order.
The fact that you have intermix (oil in the coolant, and possibly the reverse) - you really need to flush the oil and coolant systems, at the very least. There are serious consequences if this was not detected early.

Hey everyone. I wanted to give a final update (hooray) for anyone who searches/reads through this thread in the future.
After taking the car to my regular mechanic we were able to solve the issue. The throttle body needed to be resealed after a smoke test, that was partial blame for the sluggish driving. The main issue turned out to be the throttle position sensor. It had a lot of liquid inside (water/oil) and it was causing faulty readings, hence the sudden jerking/loss of acceleration. All is fixed and the car runs great the first few drives.
