I've done some forum searches and perhaps my key word choices aren't great, but I am looking for info on how to get rid of the back seat with out it looking like I just ripped it out. I am shooting for a nice, finished, carpeted look; anyone attempt this? Thanks!

There is some info in the archives but I have no idea what keywords to use. Maybe "968 shelf" or "package shelf".
You'll find a mess of glue and foam under the seat, easily removed with adhesive remover like from 3M or Goof-off (I use Zylene/Zylol). I've seen two things done that looked okay. One is to use the low-pile carpet like for speaker enclosures and some creative cutting, sewing and gluing. The other is to form a shelf over the top - you'll see that the exposed area is relatively easy to "box" in.
