Generally one removes the entire back decklid. If you look on Pelican there are always decklids with and without whale tails for sale. It will however require the painting of the new decklid.
If you just remove the whale tail there will be some holes that remain that will have to be patched I think.
Just go with the whale tail for a while, see if if grows on you or not. While you are doing that search the classifieds for a clean deck lid.

You buy a (used) replacement rear decklid. They typically went for about fifty bucks, a few years back. They might be more now. If you can find one with the same color paint, you'll save the $2-300 cost of getting it painted. Even so, you can sell the whaletail and have money in your pocket when you're done with the exchange.
You do not want to use the decklid that's mated to the whaletail -- holes are drilled into it in order to attach the tail, and it's worth more as a decklid/tail unit.

If you sell the tail, you might want to sell the right side decklid hinge and gas strut as well. Keep your old decklid light and latch. I paid probably $450 or so I think for mine with wiper, motor, the whole shebang. You will only need and want a single gas strut for your tail less decklid, or you can totally go without and use a light aluminum rod if that is your taste.

Your post says the car of your dreams has a whale tail on it but you need a coupe. I didn't think the whale tail determined if the car was a coupe or not. If the car is a narrow body with a turbo whale tail, then I totally get why you want to get rid of it. FWIW, I was looking at a used deck lid with no tail recently from a dismantler and it was about $350.00 for one in excellent condition.
