After a recent alternator replacement, I left off the plastic cone-shaped shield with the 2 fins off the back of the alternator. Partly because it is a PITA to fit with the wiring in place. It would seem to route cooling air to one side of the engine, but on a recent 160 mile day in 90 degree temps, there was no discernible difference in temps. Is this piece critical to cooling or just aimed at protecting the alternator wiring/terminals ?

Yes, it is needed.
You will develop hot spots on the motor without it not detectible by temp change alone.
I would not drive the car witout one unless it was below 32 outside.
