How do you know if you have pulled a head stud?

You can hear a rhythmic pop-pop-pop type of sound at idle, or when the valve covers are off a stud falls on the ground.

Remove the cam covers - the nut will either be rattling around in there or will be loose on the stud. By listening to the noise Bill describes you should be able to tell if its left or right bank - top or bottom not so easy just by the sound.
