Sorry about not responding sooner but have been busy. I just had a new clutch put in with a brand new linkage connection too. The only way I am starting out in 3rd gear is if I have a 7 speed trans so you can rest easy that that is not it. I can shift through all the gears at a certain speed and it will put it at different rpm in ALL 5 gears. So if anyone has an idea that is not that I am starting in 3rd gear that would be apreciated.

Derek, Could you post some of your speed(s) at different rpm points in each gear? For example:
1st gear / 3000 rpms / mph = ???
" / 4000 rpms / mph =
" / 5000 rpms / mph =
" / 6000 rpms / mph =
2nd gear / 3000 rpms / mph =
3rd gear / 3000 rpms / mph =
4th gear / 3000 rpms / mph =
5th gear / 3000 rpms / mph =
As others are stating, it doesn't seem possible that you're reaching 80 mph in 1st gear.... I don't have an answer, just looking for a reasonable explanation for what you're experiencing.

Hi! Is it possible that your speedo is actually reading km per hour? The numbers would tie up then. 100kph is equivalent to 62mph I think and that is about max in second in my car. It's the best I can come up with. I don't believe there is anyway it could be pulling these speeds in mph in these gears.

This is a very interesting problem... how does the car run with the new clutch? In both my SC and #.2, in 1st, I can let the clutch out (gently) with no throttle and the car will go forward smoothly on idle... not sure if the 2.7 has the torque to do that also, but I suspect it should.
