How difficult will it be to find interior parts?
I am starting to search for a used Cinnamon interior leatherette such as doors, knee pads, rear seats and rear shelf except dashboard and front seats. I understand this interior was common for 912E and 1976 911.

There is the added problem that the parts you find need to be good enough to use. Black would be difficult enough. Cinnamon will be impossible. Realistically, if you want that color you are looking at a full custom interior restoration. A top-drawer job will cost ~$12K plus the cost of used or repro donor parts.

I would put out a WTB at Pelican. Just in the last day there is a guy in the UK selling door top trim and knee pads (not cheap, about £1000 total). I saw older WTB posts, and people were coming out of the woodwork with pieces.

i would just find all the parts, spray dye with sem the ones you can't reupholster.
id do all custom upholstry, most used parts 40 years old will be in poor shape, vinyl last like 5-10 years , leather could be little longer as long as its treated right.

Is dyeing best left to a pro. or a diy?

I am sorry, but much of the advice in this thread seems misguided. Re-doing an interior with "old" vinyl, even if you could find it, is a guaranteed, very expensive path to an unsatisfactory outcome. Furthermore, you cannot dye vinyl "cinnamon" and expect it to look like anything other than crap (literally). If you must have a cinnamon interior, the only reasonable way is for you to source all necessary original or repro parts, source a "cinnamon" vinyl you like, and (unless you are very experienced or are looking for an amateurish outcome) hire a professional interior restorer do the work. Again, figure $12,000 plus the cost of parts and materials.
