Coolant - Thermostat function on start up

So, not sure if I just recently noticed (perhaps it has been the way from the beginning of ownership, but not certain), but my coolant temperature is dramatically rising after first starting up the car (when car has not been driven in a few days and is completely cold). Then, the coolant temperature quickly hits about 200 degrees or so, usually within the first few minutes of operation. Next, the coolant temperature starts to dramatically drop to about 140 degrees. During these first few minutes, the oil temperature is typically below 100 degrees.
Finally, both the coolant and oil temperatures slowing rise from about 150 degrees to the normal operating temperatures of about 230 degrees each. Nothing is over heating, but is this start up situation normal?
My only real concern is that perhaps my thermostat is not opening as quickly as perhaps it should upon initial start up.

Mine's never done that. Takes a few minutes for the coolant temp to reach normal and maybe 10 minutes for oil. Coolant usually maxes out around 190 although I always have PDK sport on.

Nope, never saw that on my 21 Spyder. I always drive off with the gauge display to monitor.
IIRC, few on here have reported similar. Can’t remember if there was an outcome.

Yes, I am watching both the oil and coolant temperatures from start up on the gauge too, and I just don't understand how the coolant can first rise so fast, and then come back down 60 degrees. Before going back up to normal operating temperature.
