Just posting this for future reference for anyone that might want to do this. This list is a compilation of different instructions and videos I watched online, and then doing it on my car.
What you will need:
madtrace kit
T25 torx driver
T20 torx driver
M12 Triple square spline bit
Ratchet for M12
Torque wrench
small screwdriver to release wiring clips
sharpie
new steering wheel nut as it's supposed to be replaced when it's removed. Part number N-907-991-02 for 2025 GTS 4.0 with GT sport steering wheel. Call dealer and purchase with VIN number if unsure of fitment. About $15.
Before picture:
1. Open doors
2. Disconnect battery negative terminal and let sit for 20 mins. Can cover terminal with plastic glove if you'd like to ensure it wont contact the battery again.
3. Stick T25 torx in 2 side holes of steering wheel and release mechanism holding in the airbag. Pull slightly on airbag while pushing with torx driver.
4. Pull the airbag out and disconnect the 2 connectors using the small screwdriver. Pay attention to where the airbag wires are routed so for install you can put them back in the same place.
4. Will need M12 bit to unscrew steering wheel nut.
5. Verify that there is a mark that says how to align the steering wheel. Maybe also use a sharpie. Take a picture.
6. Unplug plug on top of inside of wheel.
7. Take steering wheel off.
8 Remove back plastic cover (3 screws) of steering wheel using torx 20.
9. Disconnect plugs going to the paddles.
10. Unscrew the screw holding the paddles in using torx 20. There is 1 screw for each paddle.
11. Put madtrace paddle in. It helps to pop the plastic piece (behind the steering wheel buttons) up a bit and then push the mad trace in.
12. Adjust paddles to where you would like them and tighten the adjustment screws. I added a dab of blue loctite.
13. Screw in the 2 paddle screws.
14. Flip wheel over and plug in the paddles
15. Make sure paddles are where you want them one more time.
16. Put wheel back on car and make sure it's aligned.
17. Last chance to adjust the paddles
18. Screw in new steering wheel nut with M12 bit. (30NM torque)
19. Make sure all wires are routed about where they were when you started.
20. Plug in air bag. The plugs are color coded.
21. Push airbag in steering wheel until it snaps.
22. Reconnect battery.
23. With the car on roll the windows all the way down and continue to hold the switch for 5 seconds, and then all the way up and hold for 5 seconds to reset the automatic window mechanism.
Very nice writeup. The paddle positon can be adjusted after the wheel is reinstalled, it's just not as convenient/comortable to reach the 2mm allen screws with the wheel on. I had to do some fine adjustment to mine after installing and it was fine to do.

Youre correct you can actually get to the screws still.
